Yoghurt and spices enhance the flavour and tenderness of chicken, making them an excellent choice for a marinade.

Yoghurt acts as a binding agent for spices, ensuring an even distribution of flavours and the fat content in yogurt also helps to carry the aromatic compounds of the spices deeper into the chicken, infusing it with rich and robust tastes.

Additionally, yoghurt-based marinades can help prevent the chicken from drying out during cooking. The coating of yoghurt forms a protective barrier, which locks in moisture and keeps the chicken tender and juicy.

Enjoy this easy to make “have to more” chicken dish.

  1. In a large ziplock bag, place Chicken Fillets, Mediterranean Magic Seasoning and the juice of one lemon.
  2. Seal bag, Moosh it all together well, place in refrigerator for at least four hours, preferably overnight.
  3. Once marinated, heat olive oil in fry pan, add chicken and lightly brown each side.
  4. Place on a rack in a tray in a 180 deg C oven, bake for 20 minutes (internal temp of 75 deg C).
  5. Done 😊  (Tip, leave in oven turned off for 5 mins before taking out)
  6. Serve with whatever your favourite side is (goes well with any veggie, rice or chips).
